Note: Takes about 9 hours depending on brisket size, allow more time for larger briskets

Black pepper
Garlic powder
Bbq sauce

Directions
Heavily season brisket with salt & dry ingredients ( garlic powder, pepper)
Marinade in an aluminum pan- coat with BBQ sauce and refrigerate over night in covered pan
Cook: set smoker to 250 degrees F, leave dampers shut, place meat on racks with roaster pan on lower rack with about 2 in beef broth in pan.
Cook to about 150 degrees F internal temp
Transfer meat to pan & cover with foil
Increase smoker temperature to 275 degrees
Cook Brisket to 205 degrees internal temperature
Take brisket off smoker & wrap in foil. Place a towel around it and place in a warm cooler for 1.5-2 hours. This allows it to keep cooking and break down more fat.
