Mexican Skillet Tacos

Ingredients

  • 2lbs Shingle Creek Cattle Co Ground Beef
  • 1 cup chopped onion
  • 4 T taco seasoning
  • 1 can Rotel
  • 2 cup shredded cheddar cheese
  • 1 bag riced cauliflower

Directions

  1. Brown ground beef and drain any extra grease
  2. In a skillet add beef, taco seasoning, chopped onion. rotel, and steamed/drained cauliflower
  3. Stir until combined, top with shredded cheese
  4. Cover with lid for 2min
  5. Top with fresh cilantro and green onions
  6. Enjoy over rice or in tortillas!
