Beef Enchiladas

Ingredients

  • 2lbs Shingle Creek Cattle Co Ground Beef
  • 1 cup chopped onion
  • 1 can (10 ¾ oz) condensed cream of mushroom soup
  • 8 oz sour cream
  • 1 can (4oz) chopped green chilies
  • 3 cup shredded cheddar cheese, divided
  • 3 cans (10oz each) enchilada sauce, divided
  • 12 flour tortillas (8in)

Directions

  1. In a pan, cook the ground beef and onions over medium hear until meat is no longer pink, drain.
  2. Add soup, sour cream, green chilies, 1 cup cheddar cheese and ½ cup enchilada sauce – heat through.
  3. Spread ¼ cup enchilada sauce into each of 2 ungreased 13in x 9in pans.
  4. Place ½ cup beef mixture onto each tortilla, roll tortilla and place seam side down.
  5. Pour remaining enchilada sauce over tortillas in the pan, sprinkle with remaining cheese.
  6. Bake uncovered at 350 degrees for 20-25 minutes.
